
This recipe was created in our home kitchen using Catch of Norway Seafood's KING Scallops. Very easy to prepare and cook in less than 30 minutes.
Ingredients (Serves 4)
-500 grams of KING Scallops from Catch of Norway Seafood
-1/2 Teaspoon Sea Salt for the KING Scallops
-1/2 Teaspoon Ground/Crushed Black Pepper (even better if you have Green Peppercorns) for the KING Scallops
-Juice of 1 lemon.
-3 Tablespoons of Salted Butter
-1 Tablespoon of Olive Oil (Extra Virgin or Regular)
-80 to 100 grams of pasta per person (Spaghetti, Bucatini, or Linguine are best for this dish)
Cooking Instructions
1. Bring 2.5 liters of water to a boil in a deep pot for the pasta. Add a sprinkle of salt. Once boiling, add in all of the pasta of your choosing. Pasta will be ready in 8-10 minutes depending on the doneness you prefer.
2. While waiting for your pasta to cook, pre-heat a cast-iron pan or skillet over medium to high heat (non-stick pan is also okay). Once the pan is hot, add in 1 tablespoon of olive oil.
3. Pat-dry the scallops with a paper towel, then sprinkle each scallop with a bit of of the sea salt and ground black pepper.
4. Place each scallop in the pan while leaving enough room between them. This is very important to get a nice cooking temperature for the sear. Let cook for 2 minutes without touching or moving the scallops.
5. Once 2 minutes of cooking is complete, turn each scallop with a pair of tongs. Don't use a fork or pierce the scallops. Add in 2 tablespoons of butter. Baste the scallops with the butter from the pan. Let the scallops cook in the butter for 1 to 1.5 minutes.
6. Once 1.5 minutes is up, turn off the heat and remove the scallops. Once the scallops are removed, add in the last tablespoon of butter and the lemon juice. Stir until the butter and lemon are combined.
7. Plate your pasta in a deep bowl and place the scallops on top of the pasta. Drizzle the lemon butter sauce from the pan over the scallops and pasta.
